National Peach Melba Day

Peach Melba is a classic dessert that consists of peaches and raspberry sauce, served with vanilla ice cream. It was created by the famous French chef Auguste Escoffier in the late 1800s to honor the Australian opera singer Nellie Melba. To make Peach Melba, ripe peaches are poached in a syrup made with sugar, water, and vanilla, then chilled until ready to serve. Raspberry sauce, made by pureeing fresh or frozen raspberries with sugar and water, is drizzled over the peaches and ice cream before serving. Peach Melba is often served in a tall, narrow glass or dish, with the ice cream on the bottom, followed by the poached peaches, and topped with the raspberry sauce. It is a refreshing and elegant dessert that is perfect for summertime, when peaches and raspberries are in season. In addition to the classic Peach Melba, there are many variations of the dessert that incorporate different fruits, sauces, or toppings. However, the basic elements of poached peaches, raspberry sauce, and vanilla ice cream remain the same.
