National Champagne Day

Champagne is a sparkling wine that comes from the Champagne region in northeastern France. It is made using a specific method called the "Méthode Champenoise" or "Traditional Method" where the second fermentation occurs in the bottle, producing bubbles. Champagne is made from a blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes, which are grown in the Champagne region. The grapes are harvested and pressed, and the juice is fermented into still wine. The wine is then blended and bottled with yeast and sugar, which triggers a second fermentation in the bottle. The Champagne bottles are then aged on their lees (the dead yeast cells left over from the fermentation) for at least 15 months, and up to several years for vintage Champagnes. The lees are then removed through a process called "riddling" and the Champagne is corked and labeled. Champagne is known for its effervescence, lightness, and refreshing taste. It is often associated with celebrations and is commonly used for toasts and special occasions.
